For the 5 Year expression, freshly-distilled sugarcane molasses is laid into used American Oak bourbon whiskey casks for initially for 3 years before an additional 2-year finishing in used Tennessee and Canadian rye whiskey casks that have been toasted, not charred. The interplay between these barrels maintains the desired balance between the rum’s intrinsic qualities and the characteristics introduced by the oak.
The nose on the 5 Year displays prominent honeysuckle blooms mixed with soft vanilla and dark caramel. The aromas carry through to a palate of sweet-tart caramel Granny Smith apple that develops into Asian pear and honeydew melon. The finish is soft and long, with lingering cedar notes.

Authenticity - Jose Fernandez, the master distiller, ferments the molasses with a proprietary yeast partially extracted from pineapples. All expressions are straight-aged, and contain no caramel colours nor artificial flavourings
Quality - Freshly-harvested cane is crushed for its juice within 15 hours of harvest, then boiled & spun to separate the sweet and mineral-laden molasses for fermentation. The Reserva expressions are aged for additional years in used Tennessee & Canadian whiskey casks that have been toasted, rather than charred, to better retain the rum’s natural characteristics

Abelha Silver Cachaça is made from organic sugar cane in Brazil, which is freshly cut right before their distillation process. Incredibly smooth and not overly sweet, with notes of honey and apricot. This is an absolute must-have for any Caipirinha fan.

Paranubes is a 100% Oaxacan Agricole Style Rum produced in the Rio Tuerto, Huautepec region of Oaxaca, Mexico - an Aguardiente de Caña. Freshly-pressed cane juice is fermented naturally in pine vats, then moved to a copper column-still fired by spent cane fiber. 4 varieties of cane are organically grown - free of pesticides and fertilizers - then transporting the cane to the trapiche by donkey and after crushing, fermenting the juice with wild (naturally occurring, not added) yeast along with boiled mesquite bark mix in a couple of 1100 liter pinewood vats. The rum is distilled to its current abv: nothing added or removed. The result is smooth, round and sweet. Tasting Notes
Aroma: Fresh, grassy, citrus-y, light fruit, sugar cane notes

Authenticity: All the sugarcane is hand cut, no machinery is used, and it it then transported on the back of horses to the distillery.
Quality: Workers are paid 2 to 3 times average rate. The Paranubes operation created 20 full time jobs in a 40 people community
Sustainability: Labels are printed from the bagase (fibres of the sugar cane), the pot stills are fueled by the burning bagase too (no wood used here). No pesticides are used, everything is grown organically. The sugar cane is transported on the back of horses reducing pollution and carbon emissions.
Pisco

Encanto Pisco Acholado is distilled only once with no water added ( bottled at the proof it comes off the still) from old vines at the Atalaya Vineyard in Ica, Peru in a cognac style alembic copper pot stills. This is an Acholado blend of many different small batches, across vintages, and five different varietals: Quebranta (64%), Torontel (6%), Moscatel (4%), Mollar (10%) & Italia (16%)
Aroma: Soft, creamy notes of grape spirit

Authenticity: The production process involves handcrafted artisanal spirits using time honored traditions and techniques to create a blend of science,alchemy and art.
Quality: Working closely with upland and rural farmers for a locally-sourced botanical supply chain. Such as the Benguet Pine that comes for a women's farmer cooperative in the Cordillera mountains in northern Luzon.
Sustainability: ARC Spirits compost their gin botanical stillage, which they use in their own distillery gardens whilst also having a local bottle recycling program in place. As a result, their waste stream at the distillery is essentially zero.
