Paranubes is a 100% Oaxacan Agricole Style Rum produced in the Rio Tuerto, Huautepec region of Oaxaca, Mexico - an Aguardiente de Caña. Freshly-pressed cane juice is fermented naturally in pine vats, then moved to a copper column-still fired by spent cane fiber. 4 varieties of cane are organically grown - free of pesticides and fertilizers - then transporting the cane to the trapiche by donkey and after crushing, fermenting the juice with wild (naturally occurring, not added) yeast along with boiled mesquite bark mix in a couple of 1100 liter pinewood vats. The rum is distilled to its current abv: nothing added or removed. The result is smooth, round and sweet. Tasting Notes
Aroma: Fresh, grassy, citrus-y, light fruit, sugar cane notes
Palate: Lemon rind, fruity, stone fruits
Finish: Long, earthy, sweet, salt

Authenticity: All the sugarcane is hand cut, no machinery is used, and it it then transported on the back of horses to the distillery.
Quality: Workers are paid 2 to 3 times average rate. The Paranubes operation created 20 full time jobs in a 40 people community
Sustainability: Labels are printed from the bagase (fibres of the sugar cane), the pot stills are fueled by the burning bagase too (no wood used here). No pesticides are used, everything is grown organically. The sugar cane is transported on the back of horses reducing pollution and carbon emissions.
